Recipe Of The MonthGreen Rice 3 cups white rice 1 large green pepper, chopped 1/2 cup cilantro1/2 cup green onion, chopped1/2 cup parsley, chopped 3 tomatillos, chopped 1/4 cup olive oilAround 6 cups vegetable stock A few dashes of hot sauce Salt and Pepper, to taste 4 cloves of garlic, minced Blend green ingredients together with a bit of stock and set aside Sauté garlic in oil and then add rice. Cook rice in oil until rice becomes a bit darker in color Add a little more stock and half of the green mixture. Cook on low heat and very gently stir to prevent burning Add more stock and mixture as needed to cook rice. This should take about 30 minutes Turn off burner and leave rice covered to finish cooking. Take a fork and fluff the rice before serving
